very useful (in the UK and other damp climates) because it de-humidifies
the air, helping clear the interior glass.
The hot/cold controls the temperature of *only* the center vents. This
allows fresh/cold air to the face to help keep you awake. It does not
affect the temperature that the system attempts to maintain in the cabin.

Not in the 3-series. The 5/7 series has dual temperature controls.

Because the temperature differential between face and cabin is a very
personal preference - some like freezing air in their face at all times,
others don't. So it's impossible to make this function automatic.

They affect the mix of warm and cold air in the footwells for the passenger
and driver. Over time, the temp inside the car will eventually reach some
average temp of the two settings. The air directed throught the heater is
affected, not the air that comes out the vents or defroster.

The AC will switch on and off automatically to maintain the colder of the
two temps that you dialed in. The heater will also come on to add warm air
to the side with the highest setting that you dialed.
Ultimately, yes. There are thermistors in the ducts that tell the system how
warm or cold the air is, and the baffles inside the ducts are opened or
closed depending upon the outside temp, the desired inside temp, and if the
AC is on or off.

Only the heater ducts will enjoy the differences of the settings for each
side of the car. The air that is directed on the feet of you and your
passenger will be heated/cooled differently. This air will eventually mix
together in the cabin.

In my (non-BMW) German brand of cars I have had separate temp controls for
each side for years.
Presently: In my 1993 it's heater only (I have no A/C fitted) and in my
2001 I have this for ACC. I remember this feature from older models of the
car. I must admit it's always puzzled me a bit that you really are supposed
to get a temp gradient and not immediate homogenisation but, I suppose, you
can have noticeable different temps blowing at you from the side vents and
in footwells, as mentioned by a later poster.
Wife and I rarely have more than 2 degrees C between us, so to speak
(usually 1 C), so it's moot whether it makes any difference.
